No bake Vegan Peanut Butter Chocolate Chip Fudge Bars

These vegan, no bake peanut butter chocolate chip fudge bars are the fastest way to gain weight during this quarantine, but who’s counting calories during a crisis?  Not me.  My days are food centered: 7am -Wake up, eat, check emails, eat, work.  Repeat until 4pm where I run/walk 4 miles to burn off all the unnecessary (yet totally necessary) snacks I ate throughout the day.  After the walk I reward myself with a glass of Gemišt (look it up.  you’re welcome) and then of course dinner.  Like I said, food centered days. Lots of cooking.  My husband is not complaining 🙂

Ingredients:

Peanut Butter Cookie Layer:

½ cup creamy peanut butter

¼ cup melted coconut oil

¼ maple syrup

1 tablespoon vanilla extract

1/2 teaspoon sea salt

2 cups almond flour

1 cup chocolate chips

Chocolate Fudge Layer:

1 cup almonds (you can use other nuts in this like pecans or walnuts)

2 tablespoons of raw cacao powder

2 tablespoons of peanut butter

1 tablespoon of coconut oil

15 soft medjool dates

3 tablespoons water

Directions:

In a big bowl mix together the peanut butter cookie layer ingredients adding the chocolate chips last.  The mixture will be thick.  Pour over a parchment paper lined 8×8 pan and smooth out with a spatula.  Set Aside.

Next.  Place the Chocolate Fudge Layer Ingredients in a food processor and blend for about 60 seconds until the mixture it’s coarsely blended.  If the mixture is clumping together at the blade add another tablespoon of water.  Once desired consistency is reached use a spatula to spread over the peanut butter layer.

Freeze for 45 min and then cut into squares.  You can store it in your fridge or do what I did and store half in the freezer for later and half in the fridge. Enjoy!
