This is seriously one of the easiest breakfasts to put together and only requires 3 minutes of your time the night before. It’s a really great summer breakfast as it’s cold and refreshing on warm, humid summer mornings. I usually make this on a Sunday night so that my work day morning breakfasts are sorted for the beginning of the week. It’s really healthy simple cooking 🙂
Makes 4 servings:
Ingredients:
2/3 Cup Chia Seeds
2 Cups Coconut Milk
½ Tsp. Vanilla Extract
4 Tbsp. Maple Syrup
4 Tbsp. Coconut Flakes
2 Cups of Berries to top (or any fresh fruit you’d like)
Directions:
Mix all ingredients except for the berries in a mason jar, stir, shake, and cover with a lid. Place in fridge and allow to sit for 8 hours. Enjoy the next morning topped with fresh berries or mangos 🙂 enjoy!
