Healthy Apple Muffins

“The thing you are most afraid to write.  Write that.”  …For me that’s happiness and sadness.  Two mutually exclusive feelings that define and alter our lives.  The summation of many variables influence our product of perceived happiness.  Priorities change, interests change, insecurities dissolve (or, in some cases, grow) and, in turn, our definition of happiness evolves.  Over time the variables in our equation of happiness change, yet, the product remains the same, but with a little less fog from the cloud of youth each time.  In my experience, this has drastically enhanced my appreciation for genuine moments, genuine people, and genuine gestures.

These Gluten-Free Apple Muffins genuinely healthy and amazingly tasty.  I hope you enjoy them as much as I do!

Recipe adapted from http://cookieandkate.com/

Ingredients

  • 1¾ cups Brown Rice Flour
  • ¼ cup Arrowroot Flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup grated apple
  • 1 cup apple diced into ¼” cubes
  • ⅓ cup melted coconut oil
  • ½ cup maple syrup or honey
  • 2 eggs
  • ½ cup plain Greek yogurt (I used goat milk yogurt)
  • ½ cup applesauce
  • 1 teaspoon vanilla extract

Directions:

Grease a muffin tin and set the oven to 425 F

Mix all dry ingredients together and add grated apple and diced apple to dry ingredient mixture.  Toss until all apple pieces are coated.

In a separate bowl mix together remaining ingredients (oil, syrup/honey, eggs, yogurt, applesauce, and vanilla) until well blended.  Add dry mixture to wet mixture.  Stir until flour looks dissolved.

Pour into muffin tins and bake for 8-10 minutes, or until a toothpick comes out clean.
