Gluten-Free Fettuccini w/Caramelized Onions, Kale and Goat Cheese

One of my favorite quotes of all time: “It is not the strongest of the species that survives, nor the most intelligent that survives.  It is the one most adaptable to change.” – Charles Darwin.  Life doesn’t usually go as planned.  The preconceptions we form about what life is going to be like post-high school or post-college, don’t usually mirror the blue-print that life transcribes for us.  It’s human nature to anticipate the future in order to properly prepare for any acclimation that we may need to do.  However, most of the time we prepare and plan for something that we did not expect or something that won’t actually happen at all!  And that’s ok!  That’s what makes life exciting.  It’s unpredictable.  It’s crazy!  Your reactions to situations will likely influence your general happiness.  So look at change positively and disregard the people that call you naïve for maintaining a positive attitude because “What you think, you become.  What you feel, you attract.  (and) What you imagine, you create” – Buddha 🙂

Ingredients:

1 Package of Gluten-Free Fettuccine

4 tablespoons of Olive Oil

2 Red Onions (I used 1 red and 1 white) – chopped thinly

1 Bunch of Kale – chopped thinly

4 oz of Goat Cheese

Salt and Pepper

Optional – Red Pepper Flakes

Directions:

1-      Boil fettuccine according to package directions.  Once cooked drain and add 2 tablespoons of olive oil to the pasta and stir (so that the pasta doesn’t stick together).

2-      Heat two tablespoons of olive oil in a large skillet on medium-high heat and add the chopped onions.  Sauté the onions for 5 minutes on medium-high heat.  Lower to medium and sauté for another 15 minutes.  Stir frequently to avoid sticking/burning. 

3-       Add the chopped kale and sauté for another 10 minutes. 

4-      Add the caramelized onions and kale to the pasta.   Top the pasta with Goat Cheese.  Add salt/pepper/red-pepper to taste.

  1. I love fettuccine and am looking forward to testing this recipe out! I also love all of your shots on this blog. Specifically on this post, the onions look so good and I don’t even like onions!

    1. Thanks girl! I’ve only made the recipe once and I loved it, but it’s very simple. Next time I’m going to mix the fettuccine with a simple cashew cream alfredo (a mixture of garlic, lemon juice, vegetable broth, soaked cashes and nutritional yeast) and then top with the onion-kale sautee. I’ll be updating the blog soon with the modification. Totally love your posts and shots, too 🙂
